Next June or 2025 depending on work schedule. I would like to go to Quetico with my dad (if I can convince him to go to a foreign country). If I can do that, I was thinking Pickerel Lake so it wouldn’t be portaging. We would be mainly fishing for walleye and smallmouth.

Is walleye and smallmouth good fishing on this lake and any specific spots that can escape being wind bound on this lake with good fishing as well?

pickerel lake is a great option if you want / need to avoid portages. you can enter at french lake and head west as far as you like. it is a pretty big lake.
it is always wise to watch the forecast. especially the wind predictions. that could make it tough to plan a trip a long time in advance.
typically, a west wind is what most fear. but that depends which way you are going. lol
i have seen the wind switch to almost every direction over a three or four day period. sometimes it even changes direction multiple times during the day.
but typically people who plan on traveling the length of the lake, try to move from west to east, hoping to avoid a bad west wind.
it can get bad enough that i have seen kayakers turn around at the mouth of the river and head back to french. some only make it to "the pines" and cannot possibly paddle further.
as for fishing.....i have had some pretty good luck with smallmouth. caught a trophy size last year and another close to that this year. lots in between. lots of pike too. but i find the east end of the lake to be hit and miss. it depends on time of year, the weather, the wind etc etc.
i have never had much luck with walleye fishing in the east end. but i have met others who fish that area regularly and say they catch walleye all the time. so it's probably me. haha
i have never fished the far west end so i cannot comment. but i did have one great short trip where i stayed close to stanton bay and was catching big pike, nice smallmouth and even some decent walleye. i returned to that same area maybe a month later and never got a bite.
i doubt anyone will ever share their "secret fishing spots" so i wouldn't hold my breath for specifics.
pickerel has a lot of islands, bays, and points, so there is almost always a place to get out of a dangerous wind. whether there is fish there is another story.

Pickerel would be a great choice. I'd set up the trip so you can be on the water at sunrise on French which will give you the best chance of avoiding a long paddle against the wind. 4-5 hours of paddling will get you to areas with lots of Islands and shelter spots and those areas also have great campsites and good fishing.

It will take about 1.5-2 hours of paddling from French Lake to the main part of Pickerel where you can become wind bound. There is a large sand beach with large pines and multiple campsites where you can stay if wind becomes a factor at that point.

I would also plan my last day with the wind in mind. Last year, my son and I were wind bound on Pickerel while heading back to French Lake. We were going with the wind making great time that day but as we got further down the lake we realized what was already a rough situation was getting a lot worst as the width of the lake narrows down and a storm was also approaching so we landed on a sand beach and waited. We waited about 5 hours at which point we had the choice of trying to get back to the car before dark or camping one more night. We went for it, which was crazy but we were strapped and packed low, in a 18.5' canoe and both experienced canoers. We only had one wave go over the side a little as we paddled like crazy to stay at an angle to the waves. I remember seeing 3-4 wind bound groups on the Pines beach watching us cross and most likely betting we would end up in the water. We knew worst case we get swamped but the waves will just push us and everything else to the beach where the others stood and watched. Embarrassing yes but not life threating for us.

I wouldn't make that choice again but I'm glad we did it as my son and I will never forget that day and what we were able to do.
