I don’t see why it wouldn’t be safe. People dehydrate canned chicken and that seems to work well. In fact, I’ve heard several times that canned chicken works better than home cooked chicken - something to do with being cooked at pressure. I would think being canned it would work better than home pulled pork. It already has pretty low fat, which is what usually goes rancid. I’d just suggest rinsing it off to get rid of any extra fat, and break up any big chunks.
I’d say the big question is how well does it rehydrate? I say give it a try and let us know.

Will do--it's a great deal.
If anyone lives by Costco Business centers, they have a canned chicken deal that is pretty good. It's a gigantic size can for 13-14 bucks that yields quite a bit and it is low fat.
I also recommend the extra large cans of Cooked Wild Rice at Cub.
Great for dehydrating.

I'd dehydrate that! That looks like it would work great since its in water. I dehydrate canned chicken all the time. I'd rinse it too & break up the bigger pieces. Let us know how it goes. Never heard of Costco business centers..cause the nearest one to me is in NJ.
