Has anyone ever taken smoked sausage or kielbasa like the Eckrich style from the grocery store?
I was planning on smoked sausage and black beans and rice for the 2nd nights dinner. I would freeze it and keep it with the 4 frozen steaks we will eat on the first night.
My mind tell smell it would be OK as long as it didn't get too warm inside the food barrel. I usually wrap the frozen goods in newspaper.
The last two years the steaks were still partially frozen when we reached camp the first day.

We take Kielbasa and have it for breakfast on the fourth day. We do the same with Jimmy Dean sausages. I've been with other guys who've brought it and served it as late as day 6-7 (can't remember exactly). In my mind, anything that is pre-cooked and vacuum sealed like those processed meats is fine for many days, especially if I'm going to get it good and hot before eating it.

Wrap the sausage up separately and add extra insulation. If it were me, I'd pack the sausage in the center of the food barrel to keep it insulated and then put the first dinner and breakfast on top so you don't mess with the "insulation". I'd keep the steak close so it acts like a freezer pack, but with one layer of separation. That should keep the sausage cold enough.

Never had a problem with beef lil smokies 4 or 5 days in. Had Kountry Boys beef link this time on 2nd night. Start frozen and cook well. In theory the salt and preservatives help for a while.

I think this is why our ancestors invented this type of sausage. It could hang out in the barn or farmhouse in the summer heat and not go bad. We often times take a venison summer sausage in the middle of summer. Start with it frozen, but don't eat it until day 4 or 5. No problem. With it vacuum sealed, i feel confident eating it several days at room temp.
