      summer sausage review

as a solo i try to find foods that dont need refridgeration and that are in smaller portions. well, i tried something today from minimus.biz...terrible! mushy with a nasty after taste!

im sticking with klements singles i guess.

Beef stix from Schmidt's in Nicollet MN. Tops for me.

The grocery across the street carries Boars Head deli meats. I've used in May and Sept. trips without spoilage problems, the sweet dry Italian rope sausage in particular.

took boars head sausage with me last june, worked out just fine for 4 guys and 5 days

I have tried these mini-salami from the World Market and found them to be tasty. They come in a 3 oz. size and vacuum packed in plastic. I have not tried them on a camping trip, but they would seem to fit the bill perfectly.

I'd like to suggest venison summer sausage and/or the sticks like I had at wingnight.
So very tasty and it lasts. I'd be more than happy to shoot you a deer next year kanoes. Just let me know.

I try to find the smaller sizes of summer sausage but have not had any luck. These would be great Kanoes. Where do you find them?

I had one mold on me that had "no refridgeration necessary" on it a week after I bought it. I haven't found the right type yet I guess.

Wonder how these would be. Not quite summer sausage but would be close and do have other "shelf stable" meat.

They have a couple other things that I would like to try also.

Thats what I get for not reading, if you do find one of the small size let us know. I cut open a larger size 1/2 left then no one eats it, gets tossed.

It isn't summer sausage, but we take in 3 to 6 oz. packs of perreroni (you can find salami too). Obviously great for pizza in the wilderness; we chop up the pepperoni and add to spaghetti sauce for spaghetti dinner up there. Different than regular meat sauce but it is a nice flavor and we kinda like it for the last night meal to carb up for the final day paddle/portage out.

We got small gift boxes from Figi's and Hickory Farms for Christmas. Tried the Hickory Farms sausage (5oz) and really enjoyed it (the sweet hot mustard is great too!). The sausage in the Figi's box is only 1oz. but good for snacking. Hickory Farms says no refrigeration necessary and the expiration date isn't until June. Figi's does say to refrigerate after receiving to maintain quality/freshness, so it's probably not the best for canoe trips.

I sent Nueske an email this morning since I'm searching for a good sausage type product for 4 to 5 days camping/canoe tripping. This was the reply,
" Michael,
Thank you interest in our products. I would recommend that any or our snack sticks such as the summer sausage sticks, honey ham sticks, landjaeger, etc. would be a good choice and also a safe to not need refrigeration."

I am particularly drawn to those Mild Beef Sticks found in 'Beef Specialities' of menu list although Carla did not specify those for trail. I love ham so likely will have to try one their hams, aa well.

We had your venison summer sausage for Christmas hors devours this year- outrageously yummy so happy I have another one in the freezer for this coming year!

When my son was in Iraq and Afghanistan, I would send him hard smoked summer sausage that needed no refrigeration, even after cutting. Have since used it in the BW. Think it was made by Johnsonville, have to check the store. The local HY-Vee had it displayed on top of the meat counter.It gets harder and drier the longer you keep it.

Update: Nueskes summer sausage sticks & landjaegers.
Summer sausage sticks are about 8" x 1/2", tublular shaped. (11 ct./pkg) A fine ground but not a pasty 'potted meat' consistency. Applewood smoked but not especially smoky, per se.
Landjaegers are applewood smoked too and are 4" x 1/4" x 1" (flat shaped), a smoky flavor & finely ground, as well. (18 ct./pkg)
Both are good eatin. I found no preservative taste. Slight, if noticeable.

Tried another brand of summer sausage last year but didn't like the lingering heavy garlic taste. (to offset preservatives, i guess)

Nueskes brand is choice quality and are sausage in true terms. I've found a winner with this brand.

KevinL, my wife and I tried that brand of salami on our August 2011 trip and liked it. We used it with tortilla shells for sandwiches. I cannot remember how it compared to the Splendore brand which we also used on the same trip.

I do remember that the Splendore Pepperoni made for some awesome pan pizza. My wife really enjoyed it.

What we liked ever better was the Kountry Boy Sausage with Jalapeno. We also tried the Kountry Boy Pork and Venison Sausage. It too was good, yet the wife and I both liked the one with the jalapeno the best. It was more flavorful than hot.

Let me know if you try it.

Most store bought summer sausages are too fatty, and too moist for my liking.
So I 2nd Schmidts Meat Market. If I had one or the other to bring however I would bring Schmidts summer sausage over beef sticks. BUT I bring both.
