What is difference between touring and tripping canoes?
The river calmly flows, Through shining banks, through lonely glen, Where the owl shrieks, though ne'er the cheer of men Has stirred its mute repose, Still if you should walk there, you would go there again.

I'm probably way off base but here's my take on the difference. Touring canoes are probably wider, more stable craft designed for leisurely exploration. A tripping canoe is narrower, sleeker, faster designed for covering water quickly.

Actually touring canoes are narrower, smaller than tripping boats.
Most builders "trippers" are the larger boats in the lineup. Bell calls theirs "performance touring" vs touring. No hard and fast guidelines, just trippers have more capacity for week or longer trips vs weekend trips of a touring boat.
