With reflector ovens, it's all about the fire. You need flames and the those flames need to be relatively high like beginging at the bottom of the food shelf. The best fuel is pencil diameter wood a little more than a foot long. For the BWCA I feed the fire through the top of the grate so that the wood stays (and burns) upright. That keeps your flames high. With that set up your food should bake as quickly as a household oven.
If you have a low fire, or even worse, coals, it can take a very long time.
