I'm a low level kayak hobbiest, gonna try to teach myself (mostly via youtube) how to Eskimo Roll today . Any bullet points would be warmly received.

Practice your wet exit and self rescue maneuvers. These are the things that will help you.
In the real world, the conditions that will put you over will be the ones that will keep you from getting back up. Go over in icy cold water and the initial shock of it will keep you from thinking about that nifty roll you learned in a warm pool at the local high school. I used to teach it for years and have seen the effects for real when it counts.
Use your "rolls" to impress your friends on the sunny days, use the paddle float to properly save your life.
