Don't make it to difficult -- all you need is a vehicle (bread, crackers, tortillas, bagels, bannock, granola bars, etc.), and a rider (peanut butter, jelly, cream cheese, cheese, summer sausage, pepperoni, hummus, etc.).

I'm a little late to the thread, but here are some lunch options we use.

Tuna melts: Foil tuna, tortilla, cheese

Place tortilla on frying pan on stove (or fire if you so desire), place tuna and cut up cheese rounds (we use baby bell).
Cook until cheese melts, enjoy.

Fish Chowder:

Cache bay fish chowder plus recent catch. Cook according to directions, add fish about 5 minutes before its done.

Quick lunch:

Saltines, cheese, summer sausage.

High speed, low drag lunch:

Gatorade and powerbars. This is eaten in the canoe without stopping. Sip and eat alternating strokes with fellow paddler...OR stop paddling and fish.

Check with your nut alergy person about hummus. It is made from legumes and if they're alergic to peanuts they may have a problem with hummus too."

Of course, (just to play devil's advocate here) if the person is allergic to all kinds of NUTS, that might mean tree nuts. Technically, the peanut is not a nut, as it is a legume. :-)

Allergies are so specific; we have a lot of them in our family, so I have played this game for years. I don't mean to be flip at all. You just need to check carefully about what, exactly, this person is allergic to.

Here's our lunch plans for our upcoming trip. Easy to eliminate the nuts from trail mix if you make your own. or just bring dried fruit. All of these are planned for quick eating on the trail or in the canoe, no cooking required. Easy to substitute jerky or beef sticks for the pepperoni. I don't eat beef and there's turkey pepperoni sticks available so that's what we bring.

1 - Bagels with cream cheese, carrots, fruit snacks, trail mix, cookies or candy bar
2 –Cheese wedges, pepperoni, pita/crackers, granola or clif bar, apples, cookies or pop tarts
3 –Tuna/chicken wraps, cheese wedges/sticks, dried fruit or apples, candy bar or pop tarts
4 – Cheese sticks, pepperoni sticks, pita or crackers, leftover brownies or cake from dinner

From your whole foods co-op: instant hummus, just add water, great on crackers.

Soup, too.

Check with your nut alergy person about hummus. It is made from legumes and if they're alergic to peanuts they may have a problem with hummus too.

Biscotti brand makes a spread like peanut butter that is yummy and I don't think it has nuts of any kind in it.
