Backpacker tip for cooking a pizza on a stove is to mix the dough really wet, think not quite as wet as pancake batter. Bake one side, flip, put the topping on and cover. Topping should all be pre-cooked of course, you are just getting the cheese to melt. I did this once and it made a fair pizza.

My kid’s favorite food is sausage pizza. I’ve made them using a campfire and with a lot of moving around had pretty decent evenly cooked results. But with the fire ban, curious to know if anyone’s had success making something calzone-like in a skillet over a gas stove?

I have used Naan for the calzone or pizza base and they work really well. Fry pan on the stove is best to hold everything together.

Just wanted to follow up and say that this worked ok. Overall it was too much work for the results. I put the frozen sausage in my sleeping bag early AM before we hit the entry point and it was perfectly cold but mostly thawed by dinner. I cooked the sausage then added the sauce, heated, added cheese, and set aside. I made the dough, flattened it on a piece of foil and put in the sausage+sauce+cheese filling. I transferred to the skillet and slowly cooked. It came out nicely browned on the bottom. This is where disaster happened and I dropped it on the fire grate and it broke apart a bit while I flipped. It was mostly salvaged. I browned the other side and we ate it. The dough turned into a nice fried bread, but it soaked up so much of the sauce. We did have some leftover sauce which we added to the top and ate. The flavor was good, but like I said just not worth the effort.

I make them more like a quesadilla with pizza fixings ovef a stove. Works great.

I would think it’s even easier over a stove being able to control the heat more.

I was going to mention the same. I buy the Sam's club naan and throw it in the freezer so I can grab some when I go on a trip. Super versatile food to have with and it makes excellent calzones. Way easier than dealing with dough.


You could almost make a Backcountry naan cookbook. :) Tacos, cinnamon rolls, sandwiches (hot or cold), pizza fries, burritos, gyros, calzones, pizza, various Indian foods , dips, the list goes on and on.

I like to bring store bought 8” pizza crusts, a squeeze bottle of pizza sauce and some mozzarella cheese. It’s quick and easy, tastes good and I’ve done it both over the fire and in a pan. I’ve also put summer sausage on top and that’s a hit with my son.

I make a pan fried calzone on many of my trips. They’re delicious and so easy. Here’s a link to a video of me making a simple calzone with sauce on the side. I’ll try to make the link jump to the part of the video where I’m cooking.

My grandpa used some kind of those canned biscuits. He would fry them up. That was back in the 70’s/80’s.
